Boudin is pork, rice, onions and spices in a casing, steamed and sold hot from meat markets and gas-station counters across Acadiana; eat it out of the casing in the parking lot. Every stop here is on the Cajun Boudin Trail kept by Lafayette's visitors bureau. Scott calls itself the boudin capital of the world. Most sell out by the afternoon.
