Colorado green chile, briefly
Colorado green chile is a pork-and-roasted-pepper stew, thicker and often hotter than New Mexico's, ladled over almost everything: smothered burritos, breakfast burritos, chile rellenos and fries. In Pueblo it tops a hamburger in a bowl, the slopper. Peppers come from Pueblo and the San Luis Valley, and late summer smells like chile roasters outside grocery stores.
