Fat Tuesday in Hamtramck

A pączek is a Polish doughnut of rich, eggy yeast dough fried and filled with fruit, custard or cream, then glazed or dusted with sugar. Metro Detroit eats them by the dozen on Pączki Day, the Tuesday before Lent, and Hamtramck's bakeries open in the small hours for the line. Most bakeries here make them only in the weeks before Lent.
